For our week 4 bouquets we used Astilbe as a base and built a rainbow bouquet with a little bit of everything on the farm! These bouquets got the last of the Campanula and Snapdragons, pink and purple Larkspur, blue and white Nigella and their seed pods, budding Dusty Miller, Bupleurum, Dianthus, and a curly garlic scape to top it all off.
Many of our Astilbe plants came all the way from Bev's garden in Ohio, and caring for and dividing them has become one of Keith's pet projects. They only bloom once a year, but for that one beautiful week we use them in everything! The garlic scapes are another element that we only have for a brief window each season. The garlic plants put out scapes in May- they are what would be the garlic flower and we remove them from the plants so they can focus all their energy on making gorgeous heads of garlic. If you've never tried a garlic scape, they are delicious! They have a milder garlic flavor and make a delicious pesto! Plus, they are so beautiful and unique. These bouquets were a lot of fun to put together- it's great to free yourself from a color scheme once in a while!
